Are you invited to a Memorial Day BBQ, but have no idea what to bring? I am gluten free and choose not to eat red meat, so it can be difficult for me to eat at parties because many times the food doesn’t fit my dietary restrictions. Because of this I try to be sensitive to those with certain dietary needs and I like to bring food that is vegetarian and gluten free. I know this doesn’t fit everyone’s needs, but at least it helps a few of us out there. Here is an easy appetizer recipe that has always been a crowd pleaser when we have shared it with firends.

Ingredients for 12 Skewers:
12 Wooden Skewers
Fresh Basil
24 Cherry Tomatoes
24 Mozzarella Balls
Extra Virgin Olive Oil
Balsamic Vinegar
Salt and Pepper
Directions
Cut the basil in half
Pierce the middle of a mozzarella ball with the skewer and slide it down (about an inch from the bottom)
Pierce the middle of a tomato and slide it down the skewer until it rests upon the mozzarella ball
Pierce a piece of basil and slide it down the skewer until it reaches the tomoato
Continue with the another mozzarella ball, tomato and piece of basil until the skewer is full
Do this again until you have filled all skewers with cheese, tomatoes and basil
Place all skewers on a plate and drizzle the desired amount of olive oil and balsamic vinegar over skewers
Season skewers with salt and pepper
Serve and enjoy!
