Are you planning to have dinner at home this Valentines’ Day? Whether you are celebrating with your significant other or having the girls over for Galentine’s Day I hope this is a meal you would like to be special. To help make dinner a little easier I came up with this simple recipe for pesto chicken. Add a salad, some veggies and/or a pasta and your meal is complete.
Are you opting for a night in this Valentine’s Day?
Desired amount of boneless, skinless chicken breasts
1/2 cup basil pesto (you can use store bought or homemade)
1/2 cup grated parmesan or mozzarella cheese
Preheat oven to 375 degrees
Spray a baking dish large enough to fit the chicken breasts with non stick spray
Spread the bottom of the baking dish with pesto until covered
Place the chicken breasts on top of the pesto
Put the remaining pesto on top of the chicken breasts
Cover the dish with aluminum foil or a tight fitting lid and cook for about 25-30 min
After 30 minutes remove the aluminum foil or lid and pour the grated cheese on top
Cook for another 10 minutes or until cheese has melted
Serve hot and with your favorite side dish
